This October, Chef Roberto Alcocer of Michelin-starred Valle will represent Oceanside in New York City during a collaborative dinner at The Platform by James Beard Foundation, one of the most prestigious stages in the culinary world.

What a night in New York City!  On October 8th, 2025, The Collab Dinner: A Taste of SoCal Cuisine brought the spirit of San Diego’s culinary coast straight to the James Beard Platform, showcasing the vibrant flavors, creativity, and collaboration that define our region. Guests savored an unforgettable multi-course dinner led by some of Southern California’s most visionary chefs, featuring coastal ingredients, Baja inspiration, and the laid-back sophistication of our SoCal food scene. From Yellowtail from our Oceanside Harbor to artful presentations and heartfelt storytelling, it was a true celebration of community and cuisine. Thank you, New York, for coming out and supporting our San Diego chefs, your warm welcome made this evening one for the books.

Meet THE Chef

Chef Roberto Alcocer is the visionary behind Valle, Oceanside’s only Michelin-starred restaurant, and a 2025 James Beard Award semifinalist. With more than 25 years of experience in acclaimed kitchens across Baja, California, France, and Spain, Alcocer has been at the forefront of modern Mexican cuisine, blending vibrant, playful flavors with refined technique.

He first gained attention at his celebrated Valle de Guadalupe restaurant, Malva, before bringing his distinct perspective north to Oceanside. At Valle, his seasonally inspired, California-sourced menus are elevated through soulful Mexican traditions and nuanced presentation. Every dish reflects both his Baja roots and global training, creating an experience that is simultaneously approachable, refined, and deeply personal.

Through this artistry and storytelling, Alcocer is helping define Southern California’s evolving gastronomic identity – one that celebrates cultural exchange, coastal abundance, and Always O’riginal creativity.

A Cross-Cultural Coastal Collab

This special dinner also highlights the strength of the wider San Diego region. Chef Roberto will be joined by:

  • Chef Eric Bost (Carlsbad) – The visionary behind Michelin-starred Jeune et Jolie and Lilo, known for refined French technique paired with California’s seasonal abundance.
  • Chef Tara Monsod (San Diego) – A two-time James Beard Award nominee, she leads La Jolla’s Le Coq and downtown San Diego’s Animae with fearless creativity, merging Filipino American heritage and French tradition to boldly reimagine the modern steakhouse.

MICHELIN ROOTS: A CULINARY FAMILY TREE

Oceanside’s dining scene boasts several Michelin honorees and their close culinary “relatives.” Many chefs in the area have honed their skills in Michelin-starred kitchens, learning under renowned culinary masters. Here’s a peek at Oceanside’s Michelin family tree.

Valle

The Michelin Star

Valle is the first and only restaurant in Oceanside to be honored with a prestigious Michelin Star. Chef Roberto Alcocer’s much-buzzed about restaurant near the Oceanside Pier pays tribute to Baja California’s vineyard-studded Guadalupe Valley, “which furnishes the restaurant’s wine list and serves as inspiration for Chef Alcocer’s refined, modern expression of Mexican cuisine,” Michelin inspectors said. They praised the four-course prix fixe meal, which “might start with a fluffy tamal made with creamy requeson cheese, paired with earthy mole and bright herbs.” The recognition is a major coup for Alcocer, who moved to Oceanside from Baja in 2021 with the express purpose of earning a Michelin star.

Michelin Bib Gourmand

Oceanside’s Michelin accolades include a Bib Gourmand honoree, recognizing exceptional restaurants that offer outstanding quality and value. Dija Mara is a Balinese-inspired restaurant that prides itself on mixing Southeast Asian flavors with a Western flair. Michelin’s inspectors enthuse, “you’ll find some serious Indonesian cooking here.” And they praise such dishes as the charred eggplant with smoked tomato sambal and crispy fried shallots, “a textural and flavor-forward delight.”

Michelin connection: Michelin-starred Blue Duck Tavern

Roxana Pavel opened allmine, a scratch-kitchen neighborhood restaurant in May 2022. Originally from Romania, she learned to cook from her grandmother at an early age. Holding a master’s in hospitality, Pavel has worked for multiple restaurants, including Hyatt’s Michelin-starred Blue Duck Tavern, and is a certified sommelier. Everything is made in-house from dough to pasta, burrata, sauces and dressing with an emphasis on sourcing ingredients from local farmers and crafters. Her pizza (try the top-selling Better than Pepperoni pie) was picked among AAA’s top 10 in SoCal and her uniquely plated round lasagna with Mornay sauce is an Instagram influencer’s dream. Allmine’s wine program focuses on all naturally made wine, without intervention or additives, made in small production by winemakers who focus on sustainable farming practices.

Michelin connection: Michelin three-star Addison

Former Addison Chefs Nicholas Weber and Jacob Jordan have created a dining journey where the rich traditions of Chinese cuisine blend harmoniously with Southern California’s farm-fresh bounty. 24 Suns honors the subtleties of nature, capturing the essence of each micro-season in thoughtfully curated, ever-evolving menus. Tucked away in a casual strip mall, the restaurants is worth seeking for its fine Chinese cuisine, artfully crafted cocktails, natural wines, and warm hospitality. Recognized for this excellence, 24 Suns was added to the MICHELIN Guide California in 2025.

Michelin connection: Michelin three-star Benu and French Laundry

After earning three Michelin stars as chef de cuisine of Benu in San Francisco, Chef Brandon Rogers set his sights on a new venture. Through Tanner’s Prime Burgers, he and partner Eric Brandt, promise a burger experience like no other, with every menu item crafted around 100% USDA prime-grade beef sourced directly from Brandt Beef, a family-owned ranch in California’s Imperial Valley with roots going back to 1945. With a focus on quality and simplicity, Tanner’s offers just one burger, available as a single or double, but elevates it with standout ingredients. The cheese, a special aged cheddar that melts like American, was developed by cheese expert Eric Greenspan of New School specifically for Tanner’s. Artifex Brewing Co., based nearby, has created signature Tanner’s Lager and Tanner’s IPA to pair with the menu, while Avery Girl Honey, another family-owned business, supplies the honey for their sweet tea. The restaurant’s signature hot sauce is house-made, featuring a 14-day fermented chile mash. With seating both indoors and outdoors, Tanner’s is a prime destination for burger lovers, serving up a simple yet indulgent menu that includes kid-friendly items, loaded fries, and even ultra-creamy beef-fat-enhanced ice cream for dessert. This commitment to quality earned Tanner’s a place in the MICHELIN Guide California 2025.

Michelin connection: Chef William Eick’s sous chef Declan van Dorp has worked in Michelin one and two-starred kitchens including Under in Norway, KOKS during their tenure in Faroe Islands, and Marche Moderne in Newport Beach.

Matsu Oceanside is a modern Japanese-inspired restaurant celebrated for its seasonal tasting menus that artfully balance traditional Japanese techniques with a contemporary Californian twist. Each dish is meticulously crafted using locally sourced, high-quality ingredients, with an emphasis on precision and harmony in flavor and presentation. The intimate, minimalist ambiance enhances the dining experience, allowing guests to focus fully on the thoughtfully plated dishes. Oceanside’s first rooftop bar tops the list of hotspots for locals and visitors alike. High above the coastline atop the Mission Pacific Beach Resort, The Rooftop Bar flaunts breathtaking views of the city’s coastline and iconic pier, and of course, spectacular sunsets.

The Shore Room

Set off the lobby of The Seabird Resort Ocean Resort & Spa, The Shore Room embodies sophistication and elegance with San Diego’s signature brand of coastal casual. Just across the street from the beach, this gem gives guests a comfortable spot to soak up some sunshine and people-watch by day, as well as a front row seat to those dreamy Pacific sunsets by evening.

The space itself is expansive: a bar and a few tables sit adjacent to what looks like a perfectly curated living room lounge with leather couches and rattan furniture, all framed by sliding glass doors that lead out onto a cozy, oceanfront patio. The brief menu hosts an impressive list of specialty cocktails and small bites like blistered shishito peppers and roasted red pepper hummus, as well as more filling items like a classic burger.

Grab a set on a couch or pull up a chair around a firepit and linger for a while at this classically Californian Oceanside gem.

Oceanside is home to a lot of out-of-this-world eateries and drink venues, but The Space Pad is truly, well, out-of-this-world. 

This interplanetary speakeasy is tucked away inside Kilowatt Brewing. To find it, head to the back of the brewery and into the “space elevator” – the mirrored hallway that will beam you up to the planet Rillispore. Once in orbit, you’ll discover a kaleidoscope of neon colors and mesmerizing celestial shapes, a rock wall mined from Rillispore’s surface, and glass windows in the floor.

Though held in the expanse of outer space, The Space Pad is a tiny, intimate spot containing two large booths, a few hightops and a short bar, where bartenders mix up whimsical creations that are as fun to look at as they are to drink. Expect the vibrant colors of Rillispore to be found in its cocktails, along with other funky details: a whiskey sour with a floated mesquite-flavored cosmic smoke bubble, the coconut slushy-topped “Beam Me Up”, and the two-toned “Spaceman Sour”, to name a few. Delicious tropical-inspired bites, including halibut ceviche, a poke tower, and a Hawaiian hotdog, are also available.

Summertime Wine and At-Home Pickling

The sunshine always reminds me of Will Smith’s song “Summertime” and Jane’s Addiction’s “Summertime Rolls.” They always put a smile on my face. Nowadays, the sun reminds me of something else very special, Rosé. Yup, that pink stuff… and no, not white zin. All over Europe, Rosé has been very much a part of the changing seasons. It represents the transition from the colder winter temps to the much anticipated warm season. As Americans, we finally realize its food potential and well, its wonderful day drinking properties. I’d like to talk about two that I have been enjoying over the last few weeks.

First is the 40-ounce 2016 vintage Rosé and (as stated on the bottle) French wine. Everything about this wine speaks to America in a cult pop, slang kind a way. The packaging mimics a 40-ounce malt liquor bottle equipped with a screw cap. It’s hard to take this wine seriously. However, this is a fantastic example of great Rosé and it’s at a great price. 

I like to refer to things that are inexpensive as cost effective or a good value. Remember cheap is cheap. You pay for what you get. We’ve always been told to drink whites and rosé chilled. Yes, but – and this is an important but, the colder the wine the less character you get out of them. This is very true for this particular bottle. The warmer, not to be confused with hot, the more expressive it is. The color is as you would expect with a pretty pink glow. The nose is fresh cut strawberry, touch of wet stones, herb blossom and the alcohol is not too aggressive. The palette follows through with the slight under ripe berry fruits; offering a touch of minerals with a slight tart pop right at the finish. Good length with medium texture. The tangy finish makes the mouth water a touch. I dig it! Pair with grilled veggies, dried meats, creamy cheeses, and at least one other person. The importer is Verity Wine Partners; they can point you in the direction of a local retailer near you.

Second we have the Les Hauts De Lagarde 2016 Bordeaux that is organic. This wine has a beautiful dark pink color that reminds me of cherry Kool-Aid. The nose has a touch of game which makes sense as the varietals are merlot, cabernet sauvignon, cabernet franc, and malbec. There’s also a touch of honey comb, dried red fruits, and leafy greens. The palate focus is on the dried fruits, tangy citrus with medium texture. The alcohol is slightly elevated but nothing crazy; helping to give it texture. It has a nice smooth round finish with a slightly tangy zing. Very good! This should be paired with wine nerds as it has a bit of a gamey note that the more experienced wine drinker would dig. It pairs well with roasted beets, grilled chicken, and richer fish. The importer is Natural Merchants, they can hook you up with a local spot that carries it. Both wines should retail under $20 bucks.

Yup spring time is here in SoCal! We grow some of our own produce at our family farm and I like to include those veggies on the menus of our two restaurant locations. Although I have a bit of a green thumb, farming is harder than you think. But get ready, it’s time for all the wonderful veggies to start flooding the local farmers markets. Look for spring onions, summer squash, beets, zucchini, strawberries, peas, avocados, leeks, tomatoes, lions, tigers and bears. Just kidding…I just want to make sure you are paying attention. Point is, we are in the part of the year that is the “funnest” time of the year for produce. Ah yes, beautiful produce aplenty. What you might be missing are things like fresh farmer’s eggs for example. They are available year-round and wow! There is nothing like a fresh orange colored farmer’s eggs. Don’t believe me? I triple dog dare you to do a side by side comparison. You’ll be drinking the farm fresh “egg Kool-Aid” in no time. There are folks that are already picking up what I’m throwing down. The point is; if you love food and yourself, try something new and fresh.

For those of you that are garden pros, I have a question. What do you do with the un-used produce? You’ve already given it to your neighbors multiple times and they’ve stopped making eye contact with you because they don’t want any more squash or your giant zucchinis. Well, as “Portlandia” would say, “Let’s pickle it!” Yup pickles. We all love pickles. If you don’t, I’d stop reading. Pickling is an excellent way to enjoy the fruits of your labor and patience of a personal garden. I’m not a big fan of canning. There is an exception for tomatoes, love them on a boat, with a goat…. You get the idea. Nothing against canning, just the texture can be a touch, well soft for my taste. Pickles can be made of just about anything. Keep in mind the firmer the texture of the produce the better “snap” you get from the texture. Oh yeah…bread and butter pickles, dill pickles, pickle relish, pickled peppers, pepperoncini, carrots, green beans, okra, peppers, onions, cauliflower (what, you’ve never had pickled cauliflower?), tomatoes, squash, broccoli and everything in between. Vinegar is an excellent pallet stimulator. Be careful as with anything aggressive, it can be overwhelming. I frequently use it in cooking. Pickling and brining….. A Simple Pickling Recipe 

Ingredients: 

  • 2 cups vinegar (I prefer apple cider vinegar)
  • 1 cup water
  • ½ cup sugar
  • 2 Tbs salt

Note: 

This is the basic start. I always start with this and I add additional seasonal spices such as bay leaf, peppercorns, coriander, and dill.

Browning started his restaurant career in a small spot called Burger Boy in Cedar Crest, New Mexico. Chef Annalise Brolaski owns DOH! Gourmet Cookie Dough. Her company produces scrumptious vegan and gluten-free cookie dough that can be eaten raw or cooked. Annalise favors surfing at Oceanside Pier where the surf breaks both on the North and South side of Oceanside’s historic 1,942 foot-long wooden Pier. With plenty of lifeguards, certified surf schools and instructors on hand, Oceanside Pier provides an ideal choice for beginners.
